Bacon & Onion Cheesecake

6 slices Bacon
1 Onion, chopped
1 clove Garlic, minced
15 oz. Ricotta cheese
1/2 cup Half & Half
2 Tbsp. Flour
2 Tbsp. Sunset Gourmet Blackberry Honey Mustard
1/2 tsp. Salt
1/4 tsp. Cayenne pepper
2 Eggs
1/2 cup Green onions, sliced

In a skillet, saute chopped onion and garlic until tender. Drain.

In a bowl of an electric mixer, combine ricotta cheese, half and half, flour, Blackberry Honey Mustard, salt and cayenne pepper. Blend until smooth. Add eggs, one at a time -- blend until smooth. Stir in bacon, cooked onion mixture and green onions.

Grease 8 inch spring form pan; pour batter into pan. Bake at 350 degrees F for 40-45 minutes or until set.

Cool to room temperature. Serve with crackers.
