Sicilian Rustic Pesto Focaccia
Extra virgin olive oil
1 Can beer or club soda
2 Tbsp. Prepared basil pesto
1 Sunset Gourmet Harvest Beer Bread Mix
1 Cup Grated Parmesan cheese
1 Tbsp. Sunset Gourmet Oh! So Garlic
Preheat oven to 375 degrees. Brush a 9 x 13 pan with olive oil. Pour liquid in bowl and add prepared basil pesto. Add Harvest Beer Bread Mix. Firmly fold together for 20 to 30 seconds. Spread batter into pan using wet hands. Batter should be lumpy. Firmly press the tops of your fingers into the batter so that the surface is evenly dimpled. Brush the focaccia with olive oil and sprinkle with grated Parmesan cheese and Oh! So Garlic. Bake 20-25 minutes or until golden brown. Cool on wire rack. Best served warm.
