Lentil Rice
2 Tbsp. Butter
1 can Lentils
1/2 cup Sunset Gourmet Roasted Red Pepper & Onion Relish
1/4 cup Vegetable or chicken stock
1/2 tsp. Tumeric
1/2 tsp. Cumin
1 cup Wild and brown rice mix, cooked
Salt and pepper to taste
Melt butter in medium saucepan. Add lentils, Roasted Red Pepper & Onion Relish, stock, tumeric and cumin. Cook for 3-4 minutes over medium heat while stirring constantly. Add cooked rice and season with salt and pepper. Continue cooking for an additional 2 minutes.
