Ingredients
4 flour tortillas 8 eggs 1 tsp. Southwest Stuffed Pepper Seasoning Salt & pepper ½ red pepper , diced 1/3 cup of milk ½ cup shredded cheese ¾ cup diced ham
Instructions
Wrap tortillas in foil and warm in a 250°F oven while eggs are cooking. In a large bowl, whip eggs with milk, add seasonings, red pepper, ham and cheese. Heat a large skillet, add butter, and when butter is melted, add the egg mixture. Continue to stir and scramble eggs until fully cooked. Divide scrambled eggs into four portions and place on warm tortilla shells. Serve with your favourite sides.
